The 250 g block
A standard block of butter outside the US is often 250 g. That is a little more than 1 US cup (227 g) and a little over 2 sticks. If a US recipe asks for 1 cup of butter, 225 g is a close match.
Soft, melted and cold butter
Melting butter does not change its weight, but it does change how it measures in a cup. A stick is the same weight cold or soft, so measuring by weight or by the stick markings is more reliable than pressing butter into a cup.
Substituting butter
Salted and unsalted butter weigh the same, but salted butter adds salt. If a recipe uses unsalted butter, you can use salted and reduce added salt slightly. Most spreads and margarines contain more water than butter, which can change baked goods, so use them with care.
